This is the best white chicken chili I have made so, I will continue to make it again and enjoy the leftovers!

I thought that this recipe was ok but had I read the other comments I would have maybe had more luck.

It was pretty bland I thought, adding tomato, corn, and more cayenne like.

  1. Prepare 1 lb of boneless, skinless chicken breasts, diced into 1 inch pieces.

  2. You need 1 small of yellow onion, diced.

  3. It’s 1 tbsp of olive oil.

  4. Prepare 2 clove of garlic, minced.

  5. It’s 2 of 14.5 ounce cans chicken broth.

  6. Prepare 4 oz of Green chilies.

  7. You need 1 1/2 tsp of cumin.

  8. Prepare 3/4 tsp of paprika.

  9. It’s 1/2 tsp of dried oregano.

  10. You need 1/2 tsp of ground coriander.

  11. You need 1/4 tsp of Cayenne pepper.

  12. You need 1 of salt and pepper to taste.

  13. Prepare 8 oz of Neuchatel cheese (light cream cheese), cut into pieces.

  14. You need 1 cup of frozen corn.

  15. You need 2 of 15 ounce cans cannelloni beans, drained and rinsed.

  16. You need 1 tbsp of lime juice.

  17. You need 1 of chopped cilantro.

  18. Prepare 1 of Monterrey jack cheese.

  19. You need 1 of tortilla chips (optional).

Stir in the chicken stock, and lime juice and bring to a simmer.

Chicken, great Northern beans, white corn, green chile peppers, and taco seasoning combine in a slow cooker to make this award-winning chili.

  4. Meanwhile, puree 3/4 can of beans with 1/4 cup of soup broth. Add puree, remaining beans and corn to soup. simmer for about 15 minutes longer. Top off soup with lime juice..

  5. serve soup with cilantro, monterrey cheese and chips if desired..
