Ari unda or rice laddoo. Ari unda / Rice balls /Rice laddu is a traditional snack of Kerala which is easy to prepare, light on the stomach and nutritious as well. It can be prepared in less than one hour time. Wash the rice well and remove stones if any.

Today's recipe is a humble sweet/ladoo made with rice.
There is another version of ari unda/ avalose unda that,I posted earlier.
You can cook Ari unda or rice laddoo using 5 ingredients and 5 steps. Here is how you cook it.
Ingredients of Ari unda or rice laddoo

Prepare 1 cup of Matta Rice.

It’s 3/4 cup of grated coconut.

You need 1/2 cup of Jaggery grated.

You need Few of Toasted cashewnuts.

Prepare 1/8 tsp of Cardamom powder.
Rice ladoos/ari unda is a traditional sweet of Kerala with very little ingredients, rice, coconut,and jaggery.
It has the beautiful aroma of roasted rice, cardamon and cumin.
Ingerdients needed to make Ari Unda
Jaggery Syrup ( refer *notes ) Method: Use a Cast Iron pan and dry roast the Rice.

Wash rice and drain it..

Heat a pan and roast the rice till it changes its colour uniformly to a darker shade and once it's crisp and shrinks a bit switch off the flame and transfer it into a plate let it cool down..

In the same toast cashewnuts..

Take a mixer grinder jar and tip in roasted rice and grind into a fine powder. Once done add rest of the ingredients and grind for 30 secs so that everything mix together..

Transfer the above mixture onto a plate take a small portion of the mixture in your hand shape them into round ladoos these laddoos tends to harden and thats ok..
Roast until Rice is fully toasted or have a nice dark goldn color.
Makesure to use low heat and try to stir occassionally.
Once Rice is fully toasted, allow it to cool.
