White Soup (Ofe Nsala). Nsala soup or white soup as commonly called by Nigerians is a meal famous to the eastern tribe and riverine area of Nigeria. The unique feature of this soup is that you do not cook it with Palm oil. The major components of this soup are yam and catfish.

The authentic Nsala soup recipe calls for fresh whole Cat Fish, which gives this soup its unique taste.

Ofe Nsala is also popularly known as white soup (the literal translation) due to the lack of tomatoes or palm oil; ingredients which are typical to Nigerian soups and stews.

This soup is from the Igbo people of Nigeria, particularly people in Anambra state.

You can cook White Soup (Ofe Nsala) using 15 ingredients and 5 steps. Here is how you achieve it.

Ingredients of White Soup (Ofe Nsala)

  1. You need of Cow Shaki.

  2. It’s of Kpomo.

  3. It’s of Cow Liver.

  4. It’s of Cow heart.

  5. Prepare of Yam as thickener.

  6. It’s of Stockfish.

  7. It’s of Dried fish.

  8. You need of Crayfish.

  9. Prepare of Onion.

  10. You need of Salt.

  11. It’s of Yellow pepper.

  12. You need of Seasoning cube (Maggi naija pot).

  13. You need of Uziza seed.

  14. You need leaf of Uziza.

It is a very rich fresh fish soup, traditionally made with Catfish.

Efik people have their own version of White Soup, it's known as Afia Efere.

Nsala soup (white soup) is one of the most delicious of all Nigerian soups, this year alone I have made and eaten more of it than any other.

White Soup (Ofe Nsala) instructions

  1. Wash the Shaki, liver, kpomo, heart, stockfish and dried fish thoroughly.

  2. In a pot, put the Yam, Shaki, liver, kpomo,and cow heart. Season with little onion, salt, seasoning cube, uziza seed, yellow pepper. Allow to cook for a while before adding your crayfish, stockfish and Dried fish and allow to cook for 10 to 20 minutes depending on how strong the Shaki is.

  3. Bring out all the Yam and pound if theyve not really melted and add it back to the soup.

  4. Add your utazi and uziza and whoop your white soup is ready.

  5. Serve with Eba, fufu, semo or wheat.

Ofe nsala, as we call it, is a delicacy in Igboland.
