Palmoil rice with dry fish. Soak the dry fish and stock fish in cold or hot water and when soft, clean and separate them into small pieces. Parboil the rice using the method detailed in parboiling rice for cooking jollof rice. Cool the parboiled rice with cold water and put in a sieve to drain.

Boil small amount of water and add the rice add salt to taste then allow the water to dry up.rice is ready.
Once the rice is done, set aside and prepare to deep-fry the fish.
Place oil in a pan and heat until very hot.
Serve the fish on a bed of rice (drizzle red palm oil over the top if you wish) and accompanied by the hot pepper sauce.
