Simple Jollop Spaghetti. Note: My mixed vegetables consist of Carrots, Green Beans, and Sweet Peas but feel free to use any choice of Vegetables. Jollof spaghetti is a delicious alternative to everyday Nigerian Jollof rice. This recipe is incredibly delicious and cooks way faster than the rice version.
I used to cook it with all kinds of protein; from dry fish to liver to shaki.

It is common to prepare jollof spaghetti with tomato stew or paste but it's more delicious, tasty and nutritious when you add vegetables.

Parboil the spaghetti to reduce the starch, drain and set aside..

Put the pot for the lollop on medium low heat, pour in the veg. Oil..

When the oil heats up, add in sliced onions and fry for some minutes..

Add in pepper mix, stir in to combine. Cover and allow to cook for 5mins..

Once the sauce is reduced, pour in the seasonings, thyme, curry, ginger and garlic. Taste the sauce and adjust for salt..

Add in enough water to cook the spaghetti, not too much. Add in the spaghetti into jollop base. Combine it into the base sauce properly, cover and allow to cook..
