Edikaikong Soup. The Nigerian Edikang Ikong soup or simply Vegetable Soup is native to the Efiks, people from Akwa Ibom and Cross River states of Nigeria. It is a general notion that the Edikang Ikong soup is very nutritious and this is very much so. Prepared with a generous quantity of pumpkin leaves.

There are lots of variations for the soup.

For example, some people choose to add onions, while others choose to omit them.

Almost all versions include pumpkin leaves, water leaves, and a combination of meat and seafood.

Edikaikong Soup instructions

  1. Wash your meat and kpomo and season with salt, onion, pepper, seasoning cube and the blended uziza seed,cook with little water till tender..

  2. Add your crayfish,stockfish,and dried fish, then cover and allow to cook for while..

  3. In a separate pot, pour the palm oil, add a little onion, then pour your water leaf and stir fry for a while before adding your ugu leave.

  4. Finally add your pre boiled meat, kpomo and the rest. Fully incorporate, allow to cook for 5mins and whoop your soup is ready.

  5. Serve with Eba, fufu, semo or wheat..
