Ingredients of Bottle gourd (Lauki) Stew with mustard paste

  1. It’s 1/2 kg of Lauki, cleaned, finely chopped.

  2. It’s 2 of small potatoes, cleaned and finely chopped.(optional).

  3. Prepare 2 of chopped green chilli.

  4. You need 1 of and 1/2 tsp finely chopped garlic.

  5. It’s 1 of larger Onion chopped.

  6. It’s 2 of big tomatoes chopped.

  7. It’s 1 tbsp of chopped coriander leaves.

  8. It’s to taste of Salt.

  9. You need 1 tsp of Mustard oil.

With few variations, this recipe is called Lauki ki subzi or dudhi curry in the north.

In Andhra we call it Sorakaya or Anapakaya.

Bottle gourd (Lauki) Stew with mustard paste step by step

  1. First grind the ingredients of mustard paste in a mixer to a fine paste..

  2. Mix this mustard paste and rest of the ingredients including oil properly..

  3. Transfer to a microwave oven safe bowl..

  4. Cook covered in a pre-heated microwave oven for 6 minutes at 180℃..

  5. Let the bowl stay in oven for 5 minutes.

Serve hot with Roti or Rice Thanks..
