Spaghetti jollof. Note: My mixed vegetables consist of Carrots, Green Beans, and Sweet Peas but feel free to use any choice of Vegetables. Jollof spaghetti is a delicious alternative to everyday Nigerian Jollof rice. This recipe is incredibly delicious and cooks way faster than the rice version.
I used to cook it with all kinds of protein; from dry fish to liver to shaki.

Ingredients of Spaghetti jollof

Prepare of Spaghetti & seasoning.

It’s of Tomatoes & red pepper.

It’s of Veg oil & onions.
Season Prawn and chicken breast with Multipurpose seasoning and salt.
Place a pot on heat, add vegetable oil then add in the chicken to fry.
Before the chicken is fried, add in the prawns (prawns take less time to cook hence adding it later than chicken) The Coconut Spaghetti Jollof is ready to be served.
The Coconut Spaghetti Jollof is perfect when eaten alone but feel free to serve it with Fried Plantain.

Add Veg oil and onions in a cooking pot..

And then add the grinded Tomatoes and red pepper together in the cooking pot stir fry, and add water until the water reach the boiling point..

Add the spaghetti until cooked, it can be serve with Tomato sauce likewise kidney or liver sauce..
Spaghetti should be cooked with a very big pot.
That is to say, the pot should contain the spaghetti and still have plenty of unused volume.
I am bringing an interesting twist to your regular Jollof Spaghetti.
When I tasted the end product, I felt Jollof Spaghetti was missing something.
It had the normal nice jollof taste, , the sweet tomato taste.
