Easiest Way to Cook Eating on a Dime Cucumber Cake Delicious, fresh and tasty.

Cucumber Cake. I had left the seeds of the cucumber intact- that lent a nutty, crunchy taste to the cake. Feel free to scoop it out if you please. The cucumber by nature of their high moisture content will give the batter a thinner texture ; ensure the final mix is of a pancake batter consistency Add little more flour if required.

The cake was well received so I decided to make a grain-free version and try it out.

The cucumber is a subtle flavor but is definitely present.

I found the cucumber hard to blend as well and eventually added the eggs to the blender to give it more liquid to blend with.

Ingredients of Cucumber Cake

  1. Prepare of big Cucumber, grated.

  2. It’s of Coconut, grated.

  3. It’s of Coconut, finely chopped.

  4. You need of Groundnut, Roasted, deskinned and halved.

  5. You need of Puffed Channa.

  6. It’s of Jaggery Syrup.

  7. You need of Fine Semolina (Rava).

  8. It’s of Baking Powder.

  9. You need of Salt.

  10. You need of Water.

I like the contrast of the light green color and the white frosting.

Add the dry ingredients to the cucumber mixture and stir just to combine.

DO NOT OVERMIX or your cake will turn tough.

Gently fold in the cashews, cherries and coconut.

Cucumber Cake step by step

  1. Mix all the above ingredients, pour it into a greased baking tray and bake it in a baking oven at 20° centigrade for 40 minutes..

  2. Cool it, slice it and enjoy with fresh cream or ghee..

Pour the batter into the greased cake pan.

The cake is done when the top is golden and the "toothpick test" comes out clean.

With no refined flour or refined sugar, this is the best tea cake so far!

Serve the cucumber cake plain or accompanied with some ghee or milk.
