Slice all the veg very thinly. You can use a knife but preferably use a mandolin or a food processor to achieve the thin slices..

Mix the veg in a roasting tin with the tomato paste and a little oil. Roast at 150 degrees Celsius for 45 minutes to 1 hour until the veg is browned.

Add the wine and 1ltr water to the veg and return to the oven for 1 hour..

Strain the liquid from the veg into a pan. Simmer until the liquid has halved in volume..

Add cornflour to thicken, and plenty of salt to taste. Serve with your roast!.
