Recipe: Tasty Palm oil rice Delicious, fresh and tasty.

Palm oil rice. Palm oil rice is even more delicious than Jollof rice. I know, I know; to you it may sound crazy to say that. But with Palm oil rice, the time frame for cooking is way easier than the regular Jollof rice.

Njanga Rice or Crayfish Rice or Palm Oil Jollof Rice or Palm Oil Rice or Native Jollof Rice is rice cooked with crayfish, palm oil.

It is smoky, spicy, so good!

When I first wrote this recipe on the blog, it was totally unplanned.

Ingredients of Palm oil rice

  1. Prepare 2 cups of rice.

  2. It’s of Palm oil.

  3. Prepare of Crayfish.

  4. You need of Tomatoes.

  5. You need of Carrot.

  6. You need of Tatashe.

  7. You need of Onion.

  8. It’s of Maggi.

  9. You need of Salt.

Nigerian palm oil jollof rice is a variant of the Nigerian Jollof rice.

The main difference being that palm oil is used rather than vegetable oil.

Just like the Palm oil Stew, local spices are also used.

Nigerian Palm oil jollof rice is not usually served at parties, which is really a shame, because it can hold its own flavour wise and aesthetically against any rice dish.

Palm oil rice step by step

  1. Wash onions, tomato, tatashe, carrot. Slices them and set aside..

  2. Pick dirts from crayfish and blend. Set aside..

  3. In a frying pan, pour palm oil on low heat and allow to bleach. Set aside to cool..

  4. In a pot, pour water and rice and parboil. Rinse over running water to remove starchiness..

  5. Put frying pan with bleached oil on heat. And fry the veggies..

  6. Gently scoop the fried veggies from pan leaving the oil and set aside..

  7. Pour in the rice and stir. Allow it to simmer and gently add little water to cook the rice. Add maggi and salt and cover..

  8. When water is dried, pour the veggies back into rice and stir..

Growing up in Nigeria, Palm oil rice was a staple.

It was easy to cook without any hassle.

It involves the use of palm oil, spicy peppers, cray fish and dry fish.

I remember always cooking this meal and feeding my neighbor's kids.

I would cook and feed everyone while my poor mother looked on.
