Pui Shaaker Chorchori (Malabar Spinach with an assortment of vegetables) Pui Shaak er Chorchori - pui shaak or Malabar spinach cooked with a medley of vegetables.

This chorchori is accompanied with Khichuri , Payesh and chatni , For Payesh and Chutney.

Malabar spinach or basella is labeled Indian Spinach in the Asian markets.

In Bengali, this spinach is called pui shaak and it is one of my favorite vegetables.

You can have Pui Shaak'er Chorchori using 14 ingredients and 9 steps. Here is how you cook that.

Ingredients of Pui Shaak'er Chorchori

  1. It’s 1/2 kg of Pui Shaak(Malabar spinach).

  2. Prepare 8 cubes of kumro(pumpkin).

  3. It’s 1/2 of medium sized begun (eggplant)cut into cubes.

  4. You need 1 of medium sized alu(potato)cut into cubes.

  5. You need 1/2 tsp of turmeric powder.

  6. Prepare 1 tsp of coriander powder.

  7. Prepare 1 tsp of cumin powder.

  8. It’s 2 tsp of ginger paste.

  9. Prepare 1 tsp of green chilli paste.

  10. You need 1 tsp of panch phoron(Bengali five spices) for tempering.

  11. It’s 3 tbsp of mustard oil.

  12. It’s 1 tsp of sugar.

  13. You need 1/2 cup of water.

  14. You need to taste of Salt.

It is seasoned simply with ginger paste and roasted panch phoron powder.

I had Pui shaak-er chorchori, chingri diye.

This chorchori can also be made niramish (without the chingri).

Pui is a delicate green and melts nicely when it is cooked.

Pui Shaak'er Chorchori step by step

  1. Cut and clean the shaak first, cut the leaves and then chop them, also cut the danta(tender stalk) approx 1 inch long pieces and slit them in between..

  2. Cut all the vegetables as said above. Wash and keep them aside..

  3. Now heat a Kadai, add mustard oil, temper it with panch phoron..

  4. Then add begun,alu, kumro and danta of pui shaak,fry them..

  5. Add turmeric powder, salt and sugar,stir well. Cover and cook for 5 minutes..

  6. Add cumin powder, coriander powder, ginger powder and green chilli paste. Mix well cook for 2 minutes more..

  7. Now add 1/2 cup of water into this. Mix, cover and cook on low flame..

  8. When the veggies are half cooked add pui shaak.Mix thoroughly, cover and cook until all the veggies are done..

  9. Your Pui Shaaker Chorchori is ready to eat..

It is also called Malabar climbing spinach and is used in all Asian cooking.
