It’s 500 GMs of Lady finger.

You need of masala paste.

Prepare 1 of Onion.

Prepare 1" of Ginger.

You need 2 tbsp of Mustard seeds.

It’s 4 of Green Chilli and make a fine paste.

You need 1/2 tsp of Turmeric powder.

It’s 1/2 tsp of Red chilli powder (optional).

It’s 1/2 tsp of Panchphoron.

It’s 1 of Whole Dry Red Chilli.

It’s To taste of Salt.

Prepare 2 tbsp of Mustard oil.
Heat ghee and fry the Panch Phoran.
Add chilli, ginger, asofoetida, turmeric paste.
Add the chopped onions and saute till transparent.
Add the Bhindi/Bhendakaaya and turmeric pwd and combine.
Sorse Bhindi Chorchori step by step

Wash the Lady finger properly. Drain the excess water. Dry the lady finger in tissue paper or towel. If there is a moisture the curry will be sticky. Once it is done. Cut into length wise. Keep aside.

Mean while. Grind mustard seeds, ginger,chopped onion, chopped tomato and green chilli make a fine paste.

I am using mustard oil. You can use any refined oil it is up to you. But in chorchori we use mustard oil. Heat oil in kadai. Once the oil is hot. Add panch phoron and 1 whole dry red chilli. Let it crackle..

Add lady finger fry till it becomes tender. Dont over cook. Other wise it will become hard. Once it is done. Take a bowl. Add turmeric powder, a little red chilli powder and salt. Add water and make a paste. Put that paste in the vegetables and Saute it for few minutes. Till the masala coated well..

Then add mustard paste Mix………..well. Add a little water. Cover and cook till it become gravy and the oil separates from the surface. Once it is done. Switch of the flame..

Transfer to a beautiful serving plate. Decorate with green chilli and roasted dry red chilli. Now it is Ready to serve with hot………..Steam Rice.
Reduce to low flame, Saute in between so that they don't burn.
