Ingredients of Pui shak er chorchori

It’s 350 gms of Malabar spinach (pui saag).

It’s 50 grams of Diced pumpkin.

It’s 3 of medium sized Diced potatoes.

Prepare 1/2 of medium sized Diced eggplant.

Prepare 1 of Diced snake gourd (jhinge).

It’s 2 of Dry red chillies.

You need 1 tablespoon of Red chilli powder.

Prepare 1 teaspoon of Panch phoron (Bengali five spice) for tempering.

You need 1 teaspoon of Turmeric powder.

It’s to taste of Salt.

It’s to taste of Sugar.

It’s 2 of bay leaves.

It’s 3-4 Tablespoons of Mustard oil.
This recipe has been adopted from my Granny's regular menu items.
It is not very spicy and the flavors of the different veggies in it is absolutely lovely.
I particularly love the chorchori with pui or palak saag in it.
It is a great way to add greens in your diet.
Pui shak er chorchori step by step

Take cooking pan add 3 tblsp of oil. Once the oil get heated and one dry red chilli two bay leaves and panch phoron. Saute for few seconds.

Next you add all the veggies and fry it in medium flame. Add turmeric red chilli powder salt and sugar to taste. Try for another 5 minutes then add the Malabar spinach fry it for again 30 seconds. Make the flame low and cover it cook it for another 15 minutes.

After 15 minutes we will check as it will release some water dont add extra water the spinach will already lose some water. Once it's cooked you can add some green chillies.your Malabar spinach curry is ready to serve in Bengali we can say pui saag ER chochori. Serve it with hot steamed rice..
