Recipe: Eating on a Dime Danish (Lemon) Pancakes. Delicious, fresh and tasty.

Danish (Lemon) Pancakes.. This is my family's recipe by my grandma Edith who was born in Denmark. I'm the youngest in my family to make these, and my dad gets jelous every time I have these without him. The batter for these Danish-style pancakes is seasoned with cinnamon, nutmeg, and cloves and can be used by itself or with a variety of fillings.

They can be made in a flat version or in a version that looks like little puffballs, crispy and tasty.

For each type of pancake, you can add cream, syrup, fruits or berries to round them out.

Cook until the pancake is a bit stiff.

You can have Danish (Lemon) Pancakes. using 6 ingredients and 5 steps. Here is how you achieve that.

Ingredients of Danish (Lemon) Pancakes.

  1. It’s 4 of Eggs.

  2. You need 2 cup of Milk (whole works best).

  3. Prepare 1 cup of Flour.

  4. You need 1 tbsp of Suger.

  5. You need 1/2 tsp of Salt.

  6. It’s 1/2 tbsp of Lemon extract.

Before you flip the pancake be sure the panc ake is firm on the edges.

When ready flip over the pancake.

You will see it is nice and gold en brown.

The pancake should be light brown on both sides.

Danish (Lemon) Pancakes. instructions

  1. Whisk 4 egg whites in a bowl untill fluffy. No big bubbles..

  2. In blender add milk, flour, salt, suger, lemon extract and egg yolks (optional). I personally leave the yolks out, but adding them will make the batter thicker..

  3. Pour blended batter in circuler motion over fluffed egg whites. (I found this works just as well and makes less dishes.) Or pour batter in seperet bowl, pour fluffed whites on top, and using a spatula fold whites into batter. There should be lumps..

  4. Heat large skillet using medium heat. Using butter, (oil, or cooking spray) scoop batter with ladel, or small measuring cup, pour into skillet. Pick up skillet to turn and ensure batter reaches full size of skillet. (optional) Let cook untill golden on each side. These will turn out as crapes..

  5. Searving ideas. In middle of pancake add chopped fruit of any kind, (most common is strawberries) and butter. Roll pancake so fruit is inside. Sprinkle powder suger on top with some whiped cream..

When ready, r emove the Danish pancake from the fry ing pan.

An Aeggekage is a traditional Danish oven pancake, usually served as a buffet item or as a dessert for a family holiday meal.

It is a light, cake-like dish that is not too sweet and absolutely delicious with fresh seasonal berries and fresh whipped cream! (Think of it as a sweetened Yorkshire pudding).

Even though they are light and fluffy, aebleskiver aren't hollow in the center like you might think.

The batter puffs as it cooks in a special aebleskiver pan, and you turn the pancake balls with a knitting needle (the traditional tool used by Danes for turning aebleskiver), chopstick or wooden skewer.
