Fantastic Whole Wheat Pancakes. I love whole wheat pancakes because of their different texture and slightly nutty taste, but these felt like they were pretending to be regular pancakes but weren't quite as fluffy, and used cinnamon to mask the flavor. People seem to like using whole wheat rather than white whole wheat, and adding bananas. Somehow over the years, I've neglected to share a basic whole wheat pancake recipe.

Whole Wheat Flour: I used white whole wheat flour for these pancakes, but regular whole wheat flour works fine too.

I really love Gold Medal white whole wheat flour, it's much lighter than other brands that I've tried.

Baking Powder, Baking Soda, & Salt: The baking powder and baking soda help the pancakes rise and keep them light and fluffy.

Plus, whole wheat flour does not get sticky and tough when stirred together with milk, eggs, and sugar (as if, say, you were making pancakes), because whole wheat flour contains less gluten-forming proteins than white flour.

Less gluten means more fluff, so whole wheat pancakes are more likely to rise to great heights when introduced to a pan of hot oil.

  1. Mix all of the dry ingredients.

  2. Beat the eggs lightly and then add in all of the liquid ingredients to the lightly beaten eggs..

  3. Combine all of the ingredients and mix until smooth..

  4. Lightly grease a pan and put it on medium heat. Ladle the batter into the pan once the pan is warm..

  5. Once the pancake starts to show bubbles, flip it..

  6. Once the pancake appears done (or you are just so hungry you cant wait), remove the pancake from the pan..

I'd never made whole wheat pancakes before, but figured they couldn't be too bad.

I'm happy to say that I REALLY underestimated these Whole Wheat Vegan Pancakes.
