Recipe: Eating on a Dime Jollof Spaghetti and Fried Egg Delicious, fresh and tasty.

Jollof Spaghetti and Fried Egg. This step is optional. heat some oil. add the remaining onion and sauté until translucent. add the thyme, black pepper, white pepper and smoked paprika. sauté for about a minute; then add the tomato paste, the bell pepper, garlic and tomato blend. Making Jollof Spaghetti is almost the same as making the Nigerian Jollof Rice, I only add a little twist to this recipe to make it a more suited for Spaghetti. Note: My mixed vegetables consist of Carrots, Green Beans, and Sweet Peas but feel free to use any choice of Vegetables.

  7. Prepare of Salt.

  8. You need of Eggs.

  9. It’s of Vegetable oil.

Jollof Spaghetti and Fried Egg instructions

  1. Put water in a pot,add lil salt, bring to boil,add spaghetti use ßpatula to stir, cook till soft,put in a colander,pour water on it to remove starch,seT aside.Heat up oil,add onions,saute,add tomato puree,stir,fry for a min,add crayfish,seasoning,curry,stir,taste to adjust with salt, cook for 2mins,pour in spaghetti,stir,steam for a min,turn off heat….

  2. Break eggs into a bowl,dont whisk,in a frying pan,add oil oil,seasoning,salt,stir,heat up oil,add eggs,when heated,flip sides,when thick,turn off heat.. Serve with spaghetti.

I had left over jollof spaghetti, so I decided to change the taste and look to improve my appetite.

It was yummy, and then I decided I'll have to share this recipe with you guys.
