Punjabi Kadhi is a classic dish made with yoghurt and chickpea flour, served plain or with pakora/bhajis.

You need 1 cup of Dahi (curd).

You need 1/4 cup of besan.

It’s 1 1/2 cup of water to make mixture.

It’s 2 1/2 cup of water to add later.

You need 1 tbsp of Hing(asafetida).

Prepare 1 tbsp of ajwain.

It’s 1 tbsp of ginger paste.

You need 1 tbsp of garlic paste.

It’s 2 of dry red chillies.

You need 1/2 tbsp of red chilli powder.

You need 1/2 tbsp of haldi powder.

You need to taste of Salt.

Prepare 1 tbsp of amchoor.

It’s 1/2 of lime.

It’s 1 tbsp of methi dana.

Prepare 1 of large onion.
It's usually served with fluffy white basmati rice and a simple side salad of onions to nibble on.
Serve hot with plain rice, moong dal khichadi or chapatti or as a hot drink.
The thickness of the kadhi will depend of what you are planning to serve it with.
To serve with rice or by itself, keep it thin.
Besan kadhi - Serves 4 step by step

Make a mixture of curd, besan, salt, red chili powder, haldi, ginger garlic paste, amchoor, lime and water. Taste it to check if it is appropriate sour for you or you can add more lime. Keep it aside.

On the stove add oil (2 tbsp) and add ajwain and methi dana. Add dry chilli..

Once done add thin sliced onions and cook until translucent.

Now stir the mixture one more time and add it cooking pan..

Keep stirring continuously so that besan is evenly cooked. Add remaining water to get desired consistency..

Once boiled, keep stirring on medium flame for 5-6 mins and you can taste to check there is no taste of raw besan.

Add ghee and serve.
To serve with chapatti, make it thick.
Besan Kadhi can be prepared with variety of vegetables Ash Gourd, Chow-Chow, Brinjal, Bhendi, etc.
Kadhi made of Ash Gourd and Bhendi (Okra) tastes best.
This kadhi should not be confused with another curd based gravy dish that is Avial which is quite popular in Tamil Nadu and Kerala.
Make sure to use sour yogurt to get the best taste.
