Hari matar ki ghughni. Since the hare matar ki ghugni is essentially a winter specialty, and fresh peas are available in abundance in winters I suggest to make it with fresh peas. Your matar ki ghugni will take even lesser time. The lovely Hare Matar Ki Ghugni is almost everyday affair at our homes during winters when fresh peas are flowing much in markets.
Matar ki Ghugni is a snack/breakfast recipe but a true Banarasi won't mind eating this dish for a sides with Chawal-Dal combination.
There are two versions of this dish that is prepared in Uttar Pradesh- a simpler version and other a bit more elaborate.
The later version, has a green masala paste of chilies, coriander and another winter produce-green garlic (shoots and bulb).

Prepare 2 cup of green peas.

Then turn off the flame and transfer the hare matar ki ghugni prepared to a serving bowl and garnish with chopped coriander leaves (hara dhaniya patti), grated radish (mooli), chopped onions (pyaz) and green chillis ( hari mirch).

This being the season for fresh green peas and they are available in plenty, I chose to make this using them.
You could even use frozen peas if you wish.
