Recipe: Appetizing Efo-riro Delicious, fresh and tasty.

Efo-riro. Efo Riro is a rich vegetable soup that is native to the Yorubas of Western Nigeria. The vegetables that can be used to cook this soup are Efo Shoko or Efo Tete (Green Amaranth). If these are not readily available where you live, leafy or frozen spinach is a very good substitute.

These are the local spinach varieties that are very popular and easily available.

In other parts of the world, any spinach greens will do.

Efo Riro is enjoyed by many, you can also use various option of Leaf such as Shokoyokoto Efotete "green amaranth" popularly known as Green e.t.c.

You can have Efo-riro using 12 ingredients and 6 steps. Here is how you achieve it.

Ingredients of Efo-riro

  1. Prepare 1 bunch of shoko.

  2. Prepare of Peppermix (shombo,atarodo,tattasai).

  3. Prepare 1/2 cup of locust beans.

  4. You need 1 of bulb onions.

  5. You need 2 of maggi crayfish cubes.

  6. It’s 3 of maggi hotpot cubes.

  7. You need 1/2 cup of grounded crayfish.

  8. Prepare 2 pcs of kpomo.

  9. Prepare of Beef as desired.

  10. It’s 1 cup of palm oil.

  11. Prepare 1 of dry fish.

  12. It’s of Shaki as desired.

Efo riro is a Yoruba soup made with green leafy vegetables like spinach, ugu, kale, greens and the likes.

This is one of my favourite soup and i don't get tired of eating it.

Typical efo riro is made with no tomatoes and shouldn't be watery.

Efo Riro - The African Stewed Spinach also popularly known as Efo riro is a one-pot stew with layers of flavor.

Efo-riro step by step

  1. Here are d ingredients.

  2. In a pot heat palmoil, add onions n locust beans fry for 2 mins.

  3. Add grounded crayfish, peppermix n maggi hotpot cubes fry d peppermix for 20mins.

  4. After 20mins add dry fish n maggi crayfish cubes.

  5. Add d beef, kpomo, and shaki.

  6. Add shoko leaves, add more crayfish n stir allow to cook for 1min thats all enjoy.

It requires quite a number of ingredients but little work from the cook putting it all together (as long as you already have all your ingredients prepped).

The name 'efo' means vegetables, hence it is a Yoruba rich vegetable soup.

Believe me when I tell you that this happens to be one of the most delicious Yoruba soups that I have made.

Efo riro cannot be rushed, in fact, the longer you allow the stew and spinach to simmer the better it will taste.
