I always find chicken curry in every occasion that Fiji Indian hold.

Ingredients of πŸ‡«πŸ‡― Chicken curry Fiji Indian

  1. Prepare 1/2 of chicken (cut into small pieces).

  2. You need 3 of small potatoes (peel and cut each into 4).

  3. You need 2 of onion medium size (thin sliced).

  4. Prepare 3 cm of ginger (pound).

  5. It’s 1 of whole garlic (pound).

  6. You need 5 of chilli (pound).

  7. It’s of salt.

  8. It’s 1 tsp of fenugreek.

  9. Prepare 2 tsp of cumin seeds.

  10. It’s 1/2 of tsb clove.

  11. You need 1 of small cinnamon stick.

  12. You need 1 tsp of cardamon pods.

  13. Prepare 1,5 of tomatoes (chopped).

  14. You need leaves of curry.

  15. You need 1 tbs of meat masala.

  16. Prepare 1 tsp of turmeric powder.

  17. Prepare leaves of corriander (chopped for garnish).

  18. Prepare of water.

  19. You need of cooking oil (some people use ghee/purified butter).

The marrow adds amazing depth to the flavor.

You can use boneless, skinless thigh meat if you prefer.

When the Indian's (Indo Fijians) first came to Fiji they brought with them a collection of spices which changed the food scene and diets of the local Fijians.

Having lived in Fiji for a number of years a favourite of ours was the typical Fijian chicken curry.

  1. In a hot oil, fry fenugreek, cumin seeds, clove, cardamon pods and cinnamon stick.

  2. Add onion fry until smooth.

  3. Add ginger, garlic, chilli, salt (pound it).

  4. Add tomatoes and curry leave, it should become a paste after stiring around 10 minutes.

  5. Put meat masala and turmeric powder, stir it.

  6. Put chicken and potatoes.

  7. Add water, the cook until the water becomes thick (the pic I put above on the display). check the taste, add salt if needed. garnish with chopped corriander leave..

  8. Serve with roti/paratha/rice.

Chicken Curry is so popular in Fiji that it has become one of the country's National dishes (of course second to the Lovo).

My recipe below is of a masala and spice rich version of the curry.
