To prepare boondi, gram flour batter is made into small balls using a ladle with holes.

These balls are then deep fried in vegetable oil.

Sabji, kachori and boondi raita step by step

  1. Soak and grind urad dal along with laung, sauf powder, green chilli abd ginger without adding water.

  2. Mix ajwain, salt and oil in whole wheat flour and knead a soft dough.

  3. Add hing, and salt in urad dal paste and mix it.

  4. Take a small portion from dough and roll it slightly put one spoon urad mix in center and fold the edges and seal it.

  5. Dust the working top with flour and roll it carefully and deep fry it.

  6. For sabji heat oil in a cooker and add hing and jeera as it sputter add ginger and green chilli saute it and add the mix of masala (coriander, turmeric, red chilli powder.. mix it and form a paste by adding water).

  7. As oil separate add tomato puree and roast it than add potato and green peas.

  8. Add water, garam masala and salt to taste and cover it with lid and pressure cook for three whistle.

  9. Garnish it with green coriander.

  10. For raita add boondi and masala and add water ti form a perfect consistency.

  11. Enjoy sabji, kachori and boondi raita along with chopped onion.

When added in yogurt, these soak up the liquid and becomes soft.
