Prepare 500 gms of tinda.

Prepare 2 of tomatoes.

But over the time I have developed a liking towards tinde.
Tinda is made using round gourds or tinda tossed with dry spices.
Tindas are available for only a short period of time in the year during the monsoons months.
They resemble green tomatoes and are firm.
Masala tinda step by step

Firstly peel the tinda and wash it. Now cut into 4 parts but not till bottom..

Now take a bowl add salt, pepper, haldi, amchoor powder, ajwain, sabji masala and dhaniya powder and add 2 tsp oil..

Now take the slitted tinda and fill the masala in between the cuts and do same with rest of the tindas..

Now take a mixer jar add onions, tomatoes, add garlic, ginger, green chilli and make a paste..

Take a pressure cooker, add oil or ghee, add jeera and dhaniya powder. Then add paste and saute well and cook until oil releases..

Now add the masala tindaband mix well. Let it get coated with masala for 2 mintues..

Add half glass water and garam masala, close the lid and cook for 2 whistles on high flame and low down the flame and cook for 15 min..

Your subji is ready. Serve with roti or paratha or rice and enjoy..
Tindas that have a smooth skin are much better to eat than the ones that have a rough fibrous surface.
