Prepare of For Chhena/ছানা.

You need 750 ml of Full fat whole Milk.

It’s 3 tablespoons of Vinegar (or as required).

You need 1 cup of Fresh Chhena/ছানা (homemade preferably).

Prepare 4 tablespoons of Khoya/Kheer.

You need 500 ml of Full fat whole Milk.

Prepare 2 teaspoons of Crushed cardamom.

Prepare 1 tablespoon of Ghee (or as required).

Prepare Handful of crushed Dry fruits.

Boil 750ml milk. While boiling continuously stir so that the fat doesnt get separated from the milk..

Add vinegar to the boiled milk to curdle it. Curdle till it leaves green water..

Strain the chhena in a soft cheese cloth..

Once done rinse in plain water to get rid of the tangy taste of vinegar..

Make sure to squeeze out the excess water by either putting heavy pressure on chhena or hanging it up for 30 minutes..

Boil 500ml milk separately. Add the khoya and cardamom powder. Stir continuously in low flame..

When slightly thickened, add chhena and mix and stir well..

Keep on stirring constantly to get the smooth texture..

Add chopped dry fruits and saffron (optional)..

Once done, spread over a serving plate (ghee brushed) while its hot and then let it cool in room temperature..
