How to Quick Perfect Efe Riro(Vegetable with Rice) Delicious, fresh and tasty.

Efe Riro(Vegetable with Rice). Efo Riro means mixed Vegetables, it is from the Western part of Nigeria and the Calabar's has a similar soup called "Edikaikong Soup". Efo Riro is enjoyed by many, you can also use various option of Leaf such as Shokoyokoto Efotete "green amaranth" popularly known as Green e.t.c. Rice and Efo Riro with Assorted Meat Here comes the popular Nigerian meal.

The vegetables that can be used to cook this soup are Efo Shoko or Efo Tete (Green Amaranth).

If these are not readily available where you live, leafy or frozen spinach is a very good substitute.

This is my vegan version of a Yoruba classic: efo riro.

You can cook Efe Riro(Vegetable with Rice) using 1 ingredients and 3 steps. Here is how you cook it.

Ingredients of Efe Riro(Vegetable with Rice)

  1. Prepare 4 of persons. Ingredients:Frozen fish(titus), fresh tomatoes&peper, vegetable(efo tete), kpomo, smoked fish(sharwa), crayfish, iru(locust bean), palm oil, groundnut oil, onions, maggi, salt and water.

This rich spinach stew is great with rice, pounded yam, eba and other starches.

Efo riro is easy, quick and simple to make.

The name 'efo' means vegetables, hence it is a Yoruba rich vegetable soup.

Believe me when I tell you that this happens to be one of the most delicious Yoruba soups that I have made.

Efe Riro(Vegetable with Rice) instructions

  1. Process: Washed the vegetable with a pinch of salt and add to the boiling water then turned it with turning stick(i off the electric burner so the heat from it will do the remaining since the water is already hot. Blend the pepper Pot on fire then add my oil. Here I mixed red and groundnut oil together. Allow is bleach for a minute then add onion, pepper turn it together then cover it to cook for 25-30min(depend on the quantity)..

  2. Next, grind some portion of the locust bean(iru) add to the boiling pepper turn and cover it to cook for 5minute then add fish(titus), crayfish (half), smoked fish(half), small water, maggi and pinch of salt to taste. Turn and cover to cooked for another 5min. Next, I removed the Titus fish so it wont scatter then add the per-boiled vegetable, the remaining portion of ; locust bean(iru- not grinded), crayfish, smoked fish and poured the Titus fish back..

  3. Turn it carefully so I dont mess up the Titus fish cos I want it complete and not half😁. Add little water if needed, taste to see if you still need small salt cos vegetables can be funny at times allow it cook for 5min. Then reduce the heat of your gas, burner or stove and allow it settle for 3min then turn it off. Served with rice, any swallow of your choice then cap it all with chilled water, juice or soft drink. Kale Efo Riro is simply Efo Riro, the popular Nigerian vegetable soup made with Kale leaves as its main vegetable leaves.

You do not have to use just Kale leaves for this recipe, traditional leaves such as Ugu, Shoko, Tete and Spinach can also be used.
