Easiest Way to Cook Yummy Isi egwu(goat head) and ugba Delicious, fresh and tasty.

Isi egwu(goat head) and ugba. Cook the goat head with the chunks of onion, the stock cubes and as little water as possible. Top up the water as necessary but make sure there is as little water as possible in the pot. This is because we do not want any stock in the pot when the meat is done.

At times people find it difficult to different Isi Ewu and Nwobi.

There methods of preparation are the same but the meats used are different.

Nkwobi is prepared with cow leg while on the other hand Isi ewu as the name implies "goat head" is prepared with goat head.

You can have Isi egwu(goat head) and ugba using 12 ingredients and 6 steps. Here is how you cook that.

Ingredients of Isi egwu(goat head) and ugba

  1. Prepare Handful of Utazi leaves.

  2. It’s 3 of cksp Ugba.

  3. It’s 1 of cksp Crayfish.

  4. It’s 3 pieces of Fresh pepper.

  5. You need of Salt.

  6. You need 2 of Knorr seasoning.

  7. Prepare 5 of Uziza seeds.

  8. You need 1 of Ehuru.

  9. Prepare 1 of Onion.

  10. Prepare 1 of goat head.

  11. It’s 4 of cksp Palm oil.

  12. Prepare Pinch of Potash.

Isi ewu, goat head in spicy sauce is a delicacy from Igboland of Eastern Nigeria.

Similar to Nkwobi (cow foot in spicy sauce) and Homework (goat foot in spicy sauce), Isi ewu is more flavoursome because of the addition of the fatty brain of the goat.

I have eaten so much Isi ewu, I could almost identify from which restaurant a plate of Isi ewu was bought in my neck of the woods.

Add the goat head to the palm oil paste and stir very well with a timber spatula.

Isi egwu(goat head) and ugba instructions

  1. Cut the isi ewu in smal sizes and boil till is soft.Boil with knorr seasoning,salt and onion..

  2. Roast the ehuru on the heat and blend with crayfish,uziza and fresh pepper..

  3. In a pot pour in the palmoil,dissolve potash in a water and pour in the liquid in the palmoil and stir it will change to yellow..

  4. Add all the blended things and stir,slice the utazi leaves and add..

  5. Heat up the ugba for 4minutes and add to it.stir very well finally pour in the boiled isi ewu no stock in it..

  6. Stir very well and slice onion in big rings then serve..

Put it again at the stove/cooker and heat until the Isi Ewu is piping warm.

Serve the Isi Ewu in a wooden mortar as shown within the image above.

Garnish with the skinny slices of utazi and onion rings for the entire effects.

Add the goat head to the palm oil paste; Put the head back on the stove and heat it until the Isi Ewu is done; Serve Isi Ewu in a wooden bowl; Garnish with the slices of Utazi and onion; This dish is the best served with drinks.

You may choose from soft drinks to beer or even palm wine.
