Kathiyawadi Undhiyu. Kathiyawadi Undhiyu is a one pot vegetable meal. It is a hallmark of Gujarati cuisine. Undiyu is prepared in winters using root vegetables, fresh beans and seasonal veggies.

Undhiyu is a one pot vegetable casserole dish that is the hallmark of Gujarati vegetarian cuisine.

Generally preparing undhiyu takes a lot of time and needs patience.versions of Undhiyu, matla undhiyu, Kathiyawadi undhiyu and the version we have made which is surti undhiyu.

Undhiyu, a traditional Gujarati curry prepared with many fresh vegetables and dhokli muthiya, is a must have item on festivals like Uttarayan (kite flying festival), Diwali, etc. and special occasions like marriage parties.

Ingredients of Kathiyawadi Undhiyu

  1. Prepare 5 of Baby potato.

  2. It’s 6 of Brinjal.

  3. You need 100 grams of Surati papdi (splited).

  4. Prepare 100 grams of Varol (splited).

  5. Prepare 100 grams of Suran (optional).

  6. You need 100 grams of Sweet potatoes (optional).

  7. Prepare 2 pcs of Raw banana (medium size cut).

  8. You need 100 g of Purple Yam.

  9. You need 100 grams of Arbi (optional).

  10. It’s 250 grams of Mix veggies finely chopped cauliflower,cabbage,cluster beans,capsicum,carrot,French beans,tinda).

  11. You need 100 grams of Green peas.

  12. Prepare 100 grams of Rajma dhanya (white,brown optional).

  13. You need 2 cup of Oil.

  14. It’s 1 tbsp of Turmeric powder.

  15. It’s 2 tbsp of Red chilli powder.

  16. Prepare 2 tbsp of Ginger garlic and chilli paste.

  17. You need 2 tbsp of Sesame seeds.

  18. You need 1 tsp of Carom seeds (ajwain).

  19. Prepare 2 tbsp of Grated coconut (dry/fresh).

  20. It’s 2 tbsp of Peanut powder.

  21. Prepare to taste of Salt.

  22. It’s 2 tbsp of Coriander and cumin powder.

  23. Prepare 3 tbsp of Undhiyu masala.

  24. Prepare 2 cups of Coriander finely chopped.

  25. You need 2 tbsp of Lemon juice.

  26. You need 1 tbsp of Sugar.

  27. You need 1 tsp of Garam masala.

  28. It’s 1 tbsp of Mustard seeds.

  29. It’s 1 tsp of Cumin seeds.

  30. It’s 1 tsp of Asafoetida.

  32. You need 1/2 cup of Fenugreek leaves :finely chopped.

  33. Prepare 1 cup of Gram flour.

  34. Prepare 1 cup of Whole wheat flour.

  35. It’s 1 tsp of Red chilli powder.

  36. You need 1 tsp of Turmeric.

  37. Prepare to taste of Salt.

  38. You need 1 tsp of Sugar (optional).

  39. You need 1 small spoon of curd.

  40. Prepare 1 tsp of Oil.

In Kathiyawadi Undhiyu, vegetables are not stuffed but its masala is little spicier than other styles.

In Matla Undhiyu which is very popular in South Gujarat, vegetables are steam cooked in traditional Matla (clay pot) instead of pressure cooker and is known as Umbadiyu.

Regardless of which way you prepare it, its delicious and tastes yummy.

Undhiyu is a mixture of a different winter special vegetables like green beans (papdi), sweet potatoes, banana, yam, brinjal, methi and more.

Kathiyawadi Undhiyu step by step

  1. Method For muthiya Mix all the above ingredients well. And make small balls out of it. Heat oil and deep fry it untill it become golden brown and crispy. Drop muthiya on absorbent paper and set aside..

  2. Method of undhiyu: First of all Fry yam,suran,sweet potatoes,arbi and raw banana and all the veggies and potatoes golden brown on medium flame (except brinjal) Now take all above mention spices. Mix it well. Now semi cut brinjal horizontally and vertically. Fill this stuffing in brinjal..

  3. Now heat oil in pressure cooker. Add mustard seeds. Let it cracker. Then add cumin seeds and pinch of asafoetida. Add all veggies. Add stuffed brinjals. Add masalas. Add muthiya. Mix it well. Pressure cook it for 6 to 8 whistle..

  4. Our undhiyu is ready. Garnish it with sev and coriander leaves. And enjoy this drolling,tasty and mouthwatering famous gujarati undhiyu with puri or fhulka rotis friends.

Undhiyu is made in whole Gujarati with different variations, but the surti style to make Undhiyu is different and gives it a more rich taste which is famous all over Gujarat and other states.
