Efo riro. Efo Riro is a rich vegetable soup that is native to the Yorubas of Western Nigeria. The vegetables that can be used to cook this soup are Efo Shoko or Efo Tete (Green Amaranth). If these are not readily available where you live, leafy or frozen spinach is a very good substitute.
Efo Riro means mixed Vegetables, it is from the Western part of Nigeria and the Calabar's has a similar soup called "Edikaikong Soup".
Efo Riro is enjoyed by many, you can also use various option of Leaf such as Shokoyokoto Efotete "green amaranth" popularly known as Green e.t.c.
Efo Riro is a Yoruba word and it loosely means 'stirred spinach'.

Ingredients of Efo riro

It’s of Shoko (I dunno if it is called spinach or something else but that is what we call it).

Prepare 5 of Pepper mix (tasashe/red bell and 5 pepper scotch bonnet).

Prepare 1 of large Onions.

Prepare 1 of cksp Palm oil.

You need 1 tbsp of Iru woro (locust beans).

You need 2 cups of Smoked fish.

You need 2 cups of Beef.

Prepare 1 1/2 of Offals.

Prepare 2 cups of Pomo (cow hide).

It’s to taste of Salt.
In Nigeria, the vegetables used for Efo Riro are 'Efo Shoko' (Lagos spinach) or 'Efo Tete' (African spinach).
These are the local spinach varieties that are very popular and easily available.
In other parts of the world, any spinach greens will do.

Pick and wash the shoko. Then chop it. This vegetable has lots of water so you have to blanch it either with hot and cold water or wilt it without water by heating up a pot or pan and stirfrying the vegetables till it wilts and the water dries up. This method retains the green color and crunchiness of the vegetable..

Boil and season the meats to your taste..

Boil the roughly blended pepper.

After about 5-8mins of cooking and allowing the meats soak in enough pepper juice now add your blanched vegetables and stir in properly. Cover the pot and allow to simmer for 2mins on low heat so the vegetable doesnt over cook. And your Almighty eforiro is ready to be served..

Heat up the palmoil in a pot, slightly fry the chopped onions and Iru. Then add the pepper. Allow to cook for some minutes before adding the boiled meats and smoked fish..
