Efo riro. Efo Riro is a rich vegetable soup that is native to the Yorubas of Western Nigeria. The vegetables that can be used to cook this soup are Efo Shoko or Efo Tete (Green Amaranth). If these are not readily available where you live, leafy or frozen spinach is a very good substitute.

Efo Riro means mixed Vegetables, it is from the Western part of Nigeria and the Calabar's has a similar soup called "Edikaikong Soup".

Efo Riro is enjoyed by many, you can also use various option of Leaf such as Shokoyokoto Efotete "green amaranth" popularly known as Green e.t.c.

Efo Riro is a Yoruba word and it loosely means 'stirred spinach'.

You can have Efo riro using 10 ingredients and 7 steps. Here is how you cook that.

Ingredients of Efo riro

  1. You need 3 bunch of Vegetable efo.

  2. It’s 1kg of Meat.

  3. It’s 1/2kg of Smoked Fish.

  4. You need 1cup of Ponmo.

  5. You need 2tbsp of Crayfish.

  6. You need 1tbsp of Iru.

  7. Prepare 5 of Pepper.

  8. You need 2 of tomatoes.

  9. It’s 1 of onions.

  10. Prepare 2cksp of Palm oil.

In Nigeria, the vegetables used for Efo Riro are 'Efo Shoko' (Lagos spinach) or 'Efo Tete' (African spinach).

These are the local spinach varieties that are very popular and easily available.

In other parts of the world, any spinach greens will do.

Efo Riro is a very popular Yoruba soup in Nigeria, it is one of my favorite Nigerian soups because of its health benefits.

Efo riro instructions

  1. Cut vegetable leaves into bits after been washed thoroughly and then soak with warm water adding little salt to the water.

  2. Boil meat wash roasted fish and ponmo and cut into small pie.

  3. Blend pepper onions and little tomatoes.

  4. Bleach oil on fire then add the iru thoroughly washed and the pepper.allow to cook for a while.

  5. Add your meat fish ponmo etc and seasoning.

  6. Allow to cook with the pepper for a while then squeeze the vegetable into it.

  7. Allow to cook for a while add seasoning to taste and allow to cook very well your efo riro is served.

The name 'efo' means vegetables, hence it is a Yoruba rich vegetable soup.

Believe me when I tell you that this happens to be one of the most delicious Yoruba soups that I have made.
