Easy Efo Riro with poundo yam. Efo riro is a traditional yoruba dish that is served in many homes that are not necessarily from the Yoruba culture. Efo riro is sometimes served at parties, weddings and other gatherings in Nigeria. What makes efo-riro interesting for me is the ability to eat it as a stand alone meal if you are on a diet or eat it with other carbohydrate accompaniments.
Bring two cups of water to a rolling boil in a medium-sized pot.
When yam is cooked, scoop into a food processor or a wooden mortar.

Pounded Yam is a staple in many West African homes, but it is not usually eaten by itself, it is often paired with many delicious African soups, and stews like Egusi, okra soup, Jute leaves soup (Ewedu), or Stewed Spinach (Efo Riro).
To make a good Efo Riro (stewed Spinach): Get all your ingredients together: The boiled Meat, Fish, Turkey, Chicken or any other choice of protein.
Heat up the Oil: I like to heat up my Oil a bit.
I'm not a fan of bleaching palm Oil so I simply add the Onion once the Oil is hot and while the Onion is cooking in the Oil, the palm oil too is cooking.
