Efo Riro. Efo Riro is a rich vegetable soup that is native to the Yorubas of Western Nigeria. The vegetables that can be used to cook this soup are Efo Shoko or Efo Tete (Green Amaranth). If these are not readily available where you live, leafy or frozen spinach is a very good substitute.

Efo Riro means mixed Vegetables, it is from the Western part of Nigeria and the Calabar's has a similar soup called "Edikaikong Soup".

Efo Riro is enjoyed by many, you can also use various option of Leaf such as Shokoyokoto Efotete "green amaranth" popularly known as Green e.t.c.

Efo Riro is a Yoruba word and it loosely means 'stirred spinach'.

You can cook Efo Riro using 15 ingredients and 10 steps. Here is how you cook it.

Ingredients of Efo Riro

  2. You need of Pepper(atarodo, red bell pepper, and tomatoes).

  3. Prepare of Locust beans(iru.

  4. Prepare of Onions.

  9. You need of Dried prawns.

Efo Riro instructions

  1. Prepare your ingredients starting with proper Seasoning your meats and assorteds and boiling till its tender..

  2. Blend your pepper into a rough mixture.

  3. Wash you spinach and chop thinly.

  4. Prepare the stockfish as well and dice the ponmo as desired.

  5. Start the cooking process by heating up your palmoil in a clean pot.

  6. Add your chopped onions, locust bean and pepper mixture.

  7. Put in your seasoning, salt, meat, stockfish, ponmo, smoked fish, snail and other ingredients except the vegetables.

  8. Allow your sauce to fry for a while.

  9. Add your vegetables and thoroughly mix..

  10. Serve with your favorite swallow.

The name 'efo' means vegetables, hence it is a Yoruba rich vegetable soup.
