It's a technique. "Seyal means to cook in its own juices without additional water or very little water.
It's often made with ingredients that are high on water content like tomatoes and onions," says Ajwani.
Seyal fish instructions

Wash the fish and sprinkle salt both sides..

In a wok,heat oil and put 1/2 tsp turmeric powder..

Add the fish pieces in the oil and fry them till golden brown both sides. Fry all pieces same way..

You can sprinkle some coriander powder and red chilli powder on the fish pieces..

In the same wok, add sliced onions and fry them till brown..

Add ginger garlic paste and saute for a minute. Add chopped tomatoes and saute them too..

Add salt,turmeric powder,coriander powder,red chilli powder and saute till tomatoes are soft..

Put fried fish pieces on top and cover and cover for 4-5 mins..

Mix the fish with the onion tomato masala underneath and add garam masala powder and chopped coriander leaves and switch off the gas..

Serve hot with roti or parantha..
