Easiest Way to Prepare Delicious Ego riro with Eba Delicious, fresh and tasty.

Ego riro with Eba. Efo Riro is a very popular Yoruba soup in Nigeria, it is one of my favorite Nigerian soups because of its health benefits. The name 'efo' means vegetables, hence it is a Yoruba rich vegetable soup. Believe me when I tell you that this happens to be one of the most delicious Yoruba soups that I have made.

If these are not readily available where you live, leafy or frozen spinach is a very good substitute.

Efo riro simply means vegetable soup, it is the Yoruba version of edikanikong soup; it can be served with any kind of starchy bolus (eba, fufu, pounded yam or semolina), but most people serve this with boiled yam.

Efo Riro - The African Stewed Spinach also popularly known as Efo riro is a one-pot stew with layers of flavor.

You can have Ego riro with Eba using 10 ingredients and 3 steps. Here is how you cook it.

Ingredients of Ego riro with Eba

  1. Prepare of Beef.

  2. Prepare of Onions grated.

  3. Prepare of Pepper grated.

  4. Prepare of Tomatoes grated.

  5. Prepare of Crayfish.

  6. It’s of Water/stock.

  7. You need cube of Seasoning.

  8. Prepare of Soup spice.

  9. It’s of Locust bean.

  10. Prepare of Salt.

It requires quite a number of ingredients but little work from the cook putting it all together (as long as you already have all your ingredients prepped).

Efo riro is derived from the Yoruba language in Nigeria.

Efo Riro is a delicacy from the Western part of Nigeria and simply means mixed vegetables (That's my interpretation).

Calabar has a soup similar, Edikaikong soup.

Ego riro with Eba instructions

  1. Heat palm oil for 1minute and add onions,pepper,tomatoes n fry for 5minutes.

  2. Add ur boiled meat,crayfish, locust bean, spice,seasoning cube,stock n cook for 5minutes.

  3. Add blanched (pour boiling water to a washed spinach n allow to rest till soft) spinach to the pot n stir. Reduce the heat n simmer for 5minutes. Remove from heat n serve wv EBA.

Ideally, I would make efo riro with just spinach, but I couldn't find enough spinach so I added ugwu leaves. and it still tastes yummy!
