The recipe detailed on this page is what I call the Caking Method of cooking Egusi Soup (the Egusi Before Oil method). Enjoy with your favourite Swallow or Rice or enjoy.
Uziza seed is first ground before use while uziza leaf can be shredded or used as a whole leaf depending.
I made this Egusi without palm oil, however, I replaced palm oil with Palm nut cream, I used a generous about of Ehu ( Calabash Nutmeg), Ogiri and Uziza leaves.
De-shell the calabash nutmeg (Ehu) then go ahead and blend/pound together with the uziza seeds and half cup of crayfish Slice the onions and utazi leaves and set aside in a plate.

Prepare 2 cups of melon.

Prepare 2 of medium sized dry fish.

It’s 6 pieces of uziza leaves.

It’s 1 piece of ehu seed (grounded).

Wash and place the beef in a pot, season with onion and two stock cubes then cook till tender, add stock fish half way cooking.

Next, blend the melon with pepper together with water till very smooth, at this point pour melon into a pot then add about one and half water and allow to cook for fifteen minutes.

Next, add the boiled meat, dry fish, cow skin and meat stock in the pot hen continue cooking for another fifteen minutes, add crayfish and ehu seed then cook till it starts to thicken.

Taste and adjust the taste with the remaining stock cube and salt.

Lastly, add the uziza leaves then cook for few minutes and bring down..
Otherwise, you can also add the fresh uziza leaves into your green salad or stir fried.
