Efo Riro. Efo Riro is a rich vegetable soup that is native to the Yorubas of Western Nigeria. The vegetables that can be used to cook this soup are Efo Shoko or Efo Tete (Green Amaranth). If these are not readily available where you live, leafy or frozen spinach is a very good substitute.
Efo Riro means mixed Vegetables, it is from the Western part of Nigeria and the Calabar's has a similar soup called "Edikaikong Soup".
Efo Riro is enjoyed by many, you can also use various option of Leaf such as Shokoyokoto Efotete "green amaranth" popularly known as Green e.t.c.
Efo Riro is a Yoruba word and it loosely means 'stirred spinach'.

Prepare of Tomatoes.

You need cube of Maggi.

Prepare of Salt.

You need of Titus fish.

You need of Smoked fish.

Prepare of Ponmo.
In Nigeria, the vegetables used for Efo Riro are 'Efo Shoko' (Lagos spinach) or 'Efo Tete' (African spinach).
These are the local spinach varieties that are very popular and easily available.
In other parts of the world, any spinach greens will do.
Efo Riro is a very popular Yoruba soup in Nigeria, it is one of my favorite Nigerian soups because of its health benefits.
Efo Riro step by step

Blend/grate your tomatoes, pepper and onions.

Clean the Titus fish, and tear the smoked fish into pieces.

Wash you ponmo.

Place pot on fire.

Add palm oil.

When it is hot, add some sliced onions and fry.

Add locust beans and fry.

Add the blended pepper and leave to cook for some minutes… Say 10-15mins.

Add salt, Maggi cubes.

Add fish, ponmo and any other thing you wish to add.

Leave to cook for some minutes.

Add the already chopped and rinsed vegetable either with hot/cold water (spinach).

Stir together and leave to cook for 5mins.

EFO is ready.
The name 'efo' means vegetables, hence it is a Yoruba rich vegetable soup.
