Egusi soup with scent leaf and uzuza seed. Uziza Egusi soup is just a twist on the regular egusi soup made with pumpkin leaves. This West African dish made with a local melon seed (Egusi) and leafy green vegetables. This soup is prepared by most tribes in Nigeria in many different ways.

It's made from ground melon seeds, cooked in a rich pepper mix and meat broth with a handful of leafy vegetables.

Uziza can be used as a leaf or as its seed, which is usually dark and tiny in size.

Uziza seed is first ground before use while uziza leaf can be shredded or used as a whole leaf depending.

  1. Boiled the fish, meat, dry fish and kpomo with seasoning..

  2. When its done, put it down..

  3. Drain the stocks, put the pot on fire,add a little red oil,immediately add salt, onion,tomato paste, stair a little and add the egusi you have soak with little water and little red oil..

  4. Keep stairing for 2mins and add the stocks and the water..

  5. Add your pepper crayfish and seasoning.. kpomo,uzuza seed, periwinkle should also be added..

  6. Then allow to boil for 5mins.

  7. Then add your scent leaf and ready to serve..
