Mango sandesh recipe has been lying in my drafts since the past four weeks. ๐ I am back from my break with a delicious, melt in the mouth, classic Bengali dessert that has the infusion of two of my favorite ingredients, chenna and ripe mango pulp. I have used homegrown mango pulp that worked excellently for mango sandesh. Bengali's love for sweet dish or mishti is well-known and an eternal love affair and sondesh has a special place in our heart.

It is a summer dessert recipe prepared when fresh ripe mangoes are easily available in market.

Ingredients of Mango Sandesh

Prepare 500 ml of full fat milk.

Prepare 1 of lemon juice.

Mango Sandesh is a Fusion recipe prepared with mango pulp, milk, milk powder, vinegar and sugar.

Boil milk.Cut and squeeze the juice of 1 lemon in 1/2 cup water.Add lemon juice to the milk and boil till it curdles. Once it has curdled remove from flame.Add few ice cubes or chilled water to the chena.Allow it to cool and rest for 15 minutes so that chena becomes soft.Place a muslin cloth over the sieve and strain out the whey.Reserve this water to knead atta dough or add in curries.Chop 1 mango and make a paste of it..

Heat ghee in a nonstick wok.Add mango pulp and sugar.Meanwhile add milk powder to chenna and knead with your palm for 10 minutes until smooth.Add this to the mango pulp and stir continuously till almost dry and smooth but not grainy.Add pinch of cardamom powder but optional..

Divide dough into equal balls.Grease moulds and press a ball on it.Otherwise make round balls and pinch a nut in the centre.Serve this delicious and flavourful melt in mouth dessert chilled after meals..
