Tuwo and eforiro soup. This spicy ,savory soup can be accompanied with bolus meals, such as Amala, Elubo, Pounded yams, Fufu (akpu), Eba or Tuwo Shinkafa. It also goes pretty well with boiled Rice, plantains or yams. Although it is a Yoruba soup, Efo Riro is enjoyed in all parts of Nigeria.

Even though the old recipe is good as it is, I have updated it a bit and I can tell you that this efo riro.

You can have Tuwo and eforiro soup using 8 ingredients and 7 steps. Here is how you cook it.

Ingredients of Tuwo and eforiro soup

  1. You need of Spinach.

  2. Prepare of Fish.

  3. It’s of Cowleg.

  4. You need of Red oil.

  5. It’s of Fish stock.

  6. It’s of Seasoning.

  7. It’s of Attarugu.

  8. You need of Onion.

Efo riro is a special vegetable soup made with either efo, ie (alayahu) ugwu, water leaf, and many other types I.

Efo Riro is a rich vegetable soup that is native to the Yorubas of Western Nigeria.

The vegetables that can be used to cook this soup are Efo Shoko or Efo Tete (Green Amaranth).

If these are not readily available where you live, leafy or frozen spinach is a very good substitute.

Tuwo and eforiro soup instructions

  1. Cut spinach, wash well with cold water and drain..

  2. In a pot add in water and boil. Add d water to ur washed spinach and drain. Add in cold water and drain, remove excess water by squeezing it with ur hand..

  3. Cook ur fish and cowleg with seasoning till tender..

  4. In a pot add in your red oil, add onion and grinded attarugu, seasoning and locust beans Allow to fry..

  5. Add in your stock. Dont add much..

  6. Cover and allow to boil, then add ur spinach, stir well..

  7. Allow to simmer for 1-2minute. Enjoy with tuwo..

Efo riro can be served or eaten alongside any swallow be it eba, pounded yam, tuwo, fufu, basically every swallow goes well with efo riro.

It can also be served with white rice or with boiled yam so if you are not really a big fan of swallow you can still enjoy the delicious efo riro soup.

Hi Dunni, This Tuwo beans remind me of my native food, "Odon" (from Benin Republic, Porto Novo, Adjara), the difference is the addition of spices and palm oil, the taste is divine. its not popular but the sister "Amiwo" (corn flour + chicken stock +tomatoes, pepper and onion serve with plenty chewable and sauce) is very popular.

However, you can choose to make your efo riro without palm oil by simply using a blend of tomatoes and tatase (red bell peppers) to produce a reddish efo riro (vegetable soup)if you prefer, but in the absence of tomatoes, you can bleach palm oil for just few seconds and use it for the soup, it works well too.
