Efo Riro. Efo Riro is a rich vegetable soup that is native to the Yorubas of Western Nigeria. The vegetables that can be used to cook this soup are Efo Shoko or Efo Tete (Green Amaranth). If these are not readily available where you live, leafy or frozen spinach is a very good substitute.
Efo Riro means mixed Vegetables, it is from the Western part of Nigeria and the Calabar's has a similar soup called "Edikaikong Soup".
Efo Riro is enjoyed by many, you can also use various option of Leaf such as Shokoyokoto Efotete "green amaranth" popularly known as Green e.t.c.
Efo Riro is a Yoruba word and it loosely means 'stirred spinach'.

Prepare of Vegetables, chopped and rinsed.

You need of Locust beans.

It’s of Pepper and onions.

You need of Dry fish.

You need cubes of Salt and seasoning.

Efo Riro step by step

Boil your meats and stockfish, set aside.

Grate your Pepper and onions, and chop some onions separately.

Put a clean pot on source of heat, and pour like 2cooking spoon of red oil and heat it up, when it is hot, add your chopped onions and locust beans. Keep trying at interval until the onion is translucent and the locust beans is fried..

Add your grated pepper and onion, fry till the water dry up.

Add your meat, stockfish, crayfish, dry fish, seasoning cubes and salt and stir.

Add the vegetables, starting with waterleaf, then pumpkin and stir very well.

Allow to simmer for few minutes and take the pot off the heat source.
The name 'efo' means vegetables, hence it is a Yoruba rich vegetable soup.
