Tetor Dal (Bitter Gourd Dal / Lentil). Bengali Lau Die Tetor Dal Recipe is a traditional Bengali Dal usually made during the summer season. This Dal recipe is a great way to include bottle gourd and bitter gourd in your diet. Lau Die Tetor Dal is a very healthy and light dal made without onion and garlic, but is flavored with green chilies, ginger and mustard oil.

Ingredients of Tetor Dal (Bitter Gourd Dal / Lentil)

  1. You need of moong dal (split yellow / green gram).

  2. It’s of raw papaya, cubed.

  3. You need of small bittergourd, sliced.

  4. It’s of mustard oil.

  5. It’s of whole dry red chilies, broken.

  6. Prepare of bay leaves.

  7. You need of panch phoron (equal quantity of fennel, mustard, cumin, fenugreek and nigella (kalonji) seeds).

  8. It’s of ginger, finely chopped.

  9. It’s of salt.

  10. You need of turmeric powder.

  11. Prepare of ghee (clarified butter).

This is a preparation which I tasted many times at one of my Aunt's place during our visit at Shantiniketan.

Lau diye Tetor Dal is traditional Bengali dal which is often cooked during summer days in bengali households.

This nutritious lentil soup is also known as Bengali style Bhaja Muger Dal Uchhe diye or Moong lentil with Bitter & Bottle Gourd.

Tetor Dal (Bitter Gourd Dal / Lentil) instructions

  1. Dry roast the moong dal till light brown. Soak in water for 15-20 minutes. Pressure cook along with the papaya cubes in 1 cup water for 3-4 whistles. Open the lid after it cools down..

  2. Heat oil and temper with the broken red chilies and panch phoron. After it stops spluttering, add the ginger and Bay leaves and saute for a few seconds..

  3. Now add the bitter gourd and fry till light brown..

  4. Add the boiled dal, salt, turmeric powder and 1/2 cup water..

  5. Bring it to a boil and simmer on low flame for 2-3 minutes. Add ghee and mix well. Serve hot with plain steamed rice..

This simple Uchh er Dal is easily digestible so it is mostly served with rice as part of light summer lunch.
