Efo riro. Efo Riro is a rich vegetable soup that is native to the Yorubas of Western Nigeria. The vegetables that can be used to cook this soup are Efo Shoko or Efo Tete (Green Amaranth). If these are not readily available where you live, leafy or frozen spinach is a very good substitute.
Efo Riro means mixed Vegetables, it is from the Western part of Nigeria and the Calabar's has a similar soup called "Edikaikong Soup".
Efo Riro is enjoyed by many, you can also use various option of Leaf such as Shokoyokoto Efotete "green amaranth" popularly known as Green e.t.c.
Efo Riro is a Yoruba word and it loosely means 'stirred spinach'.

Cut your vegetables and rinse then add boil water to it add salt and cover to get soft a bit then u rinse and squeeze d water if if it (I dont like water in my vegetables).

Put ur palm oil on fire then add ur onions and locust beans then fry Abit add ur attarodo and Maggi let it cook very well then add your shredded smoked fish,ponmo, crayfish and cook well then add ur vegetables and stir low d heat and when d oil shows at top then ur efo iro is ready.
The name 'efo' means vegetables, hence it is a Yoruba rich vegetable soup.
Believe me when I tell you that this happens to be one of the most delicious Yoruba soups that I have made.
