Efo Riro. Efo Riro is a rich vegetable soup that is native to the Yorubas of Western Nigeria. The vegetables that can be used to cook this soup are Efo Shoko or Efo Tete (Green Amaranth). If these are not readily available where you live, leafy or frozen spinach is a very good substitute.

These are the local spinach varieties that are very popular and easily available.

In other parts of the world, any spinach greens will do.

Efo Riro means mixed Vegetables, it is from the Western part of Nigeria and the Calabar's has a similar soup called "Edikaikong Soup".

You can cook Efo Riro using 13 ingredients and 4 steps. Here is how you achieve it.

Ingredients of Efo Riro

  1. Prepare of Green leaf (efo).

  2. It’s of Atarodo.

  3. You need of Tatashi.

  4. It’s of Sombo.

  5. You need of Onions.

  6. It’s of Red oil.

  7. It’s of Dry fish.

  8. Prepare of Crayfish.

  9. It’s of Assorted meat.

  10. You need of Stockfish.

  11. You need of kpomo.

  12. It’s of Iru.

  13. You need cube of Seasoning.

Efo Riro - The African Stewed Spinach also popularly known as Efo riro is a one-pot stew with layers of flavor.

It requires quite a number of ingredients but little work from the cook putting it all together (as long as you already have all your ingredients prepped).

Efo Riro step by step

  1. Blend atarodo,onions, tatashi, sombo together, cook till the water dries up. See it aside.

  2. Set 2 cooking spoon full of red oil on heat, bleach a bit and immediately add your pepper mix; Stir and add iru. Add all meat including kpomo and dried fish.

  3. Add meat stock and stir, add crayfish,maggi cube and stir..

  4. Add the already washed and sliced vegetables. Stir, taste for Salt and bring it down..
