Efo riro. Efo Riro is a rich vegetable soup that is native to the Yorubas of Western Nigeria. The vegetables that can be used to cook this soup are Efo Shoko or Efo Tete (Green Amaranth). If these are not readily available where you live, leafy or frozen spinach is a very good substitute.

Efo Riro means mixed Vegetables, it is from the Western part of Nigeria and the Calabar's has a similar soup called "Edikaikong Soup".

Efo Riro is enjoyed by many, you can also use various option of Leaf such as Shokoyokoto Efotete "green amaranth" popularly known as Green e.t.c.

Efo Riro is a Yoruba word and it loosely means 'stirred spinach'.

You can have Efo riro using 8 ingredients and 5 steps. Here is how you achieve that.

Ingredients of Efo riro

  1. It’s of Assorted meats.

  2. Prepare of Stock fish.

  3. Prepare of Cray fish.

  4. Prepare of Dried fish.

  5. You need of Daddawa.

  6. Prepare of Seasoning.

  7. You need of Onions.

  8. You need of Ugwu.

In Nigeria, the vegetables used for Efo Riro are 'Efo Shoko' (Lagos spinach) or 'Efo Tete' (African spinach).

These are the local spinach varieties that are very popular and easily available.

In other parts of the world, any spinach greens will do.

Efo Riro is a very popular Yoruba soup in Nigeria, it is one of my favorite Nigerian soups because of its health benefits.

Efo riro step by step

  1. Place the washed meat, shaki, ponmo in a pot, add little Water season with salt, onions add 3 cups of water and cook till soft.

  2. Add the dried fish, stock fish and cook for another 10 mnts.

  3. Place a pot on heat, pour palm oil, onions, scotch bonnet and fry for some minutes continuously.

  4. Add the boiled meat, shaki, ponmo, stock fish dried fish and allow to simmer then add daddawa and Cray fish.

  5. Allow to cook for 10mnts and add ugwu.

The name 'efo' means vegetables, hence it is a Yoruba rich vegetable soup.

Believe me when I tell you that this happens to be one of the most delicious Yoruba soups that I have made.
