Sweet Navaratna Mango Pickle. This delicious pickle from western India takes time and effort to make but the results are well worth it! Each day it is given a good stir, covered and placed in a sunny spot, then brought indoors at dusk. After trying this Instant mango pickle recipe, I promise you will never buy the readymade one.

In Hindi language, it is called khatta meetha aam ka achaar.

I never thought I would be making this much pickle.

Usually I am spoilt because my mum or my mum-in-law sends us pickle.

You can cook Sweet Navaratna Mango Pickle using 12 ingredients and 2 steps. Here is how you cook it.

Ingredients of Sweet Navaratna Mango Pickle

  1. It’s 1 kg of mango.

  2. Prepare 600 gms of sugar.

  3. You need 1 tsp of ginger chopped.

  4. You need 1 tsp of garlic chopped.

  5. It’s 3 of dry red chillies deseeded and chopped.

  6. It’s 1 tsp of Kalonji,fennel seeds,fenugreek seeds mixed.

  7. Prepare 2 of green cardamoms peeled.

  8. Prepare 1 of black cardamom peeled.

  9. Prepare 10-12 of raisins.

  10. Prepare 1.5 tbsp of white vinegar.

  11. You need 1/2 tsp of turmeric.

  12. Prepare 1/4 of th tsp red chilli powder.

However, with lock down and us not being able to visit our family I had to make a plan and make my own Sweet and Sour Mango Pickle.

My mum-in-law helped me with the ingredients and the method.

How to Make Sweet mango pickle.

Boil the mustard oil and keep aside to cool.

Sweet Navaratna Mango Pickle instructions

  1. Peel the outer skin of raw mangoes.Mangoes should be so chosen that the seeds are not hard.Slit from middle,deseed and slice into 2 inch pieces.Smear salt.Spread in a plate and keep in sunlight for 2 hours.Discard the water which comes out.Heat a nonstick wok and put the mangoes alongwith sugar and little salt.Toss all.Add kalonji or black seed,fennel and 6-7 seeds of fenugreek, chopped dry red chillies,minced ginger and garlic and 1/4 th tsp garlic paste. Add peeled cardamom seeds.Toss all..

The sugar should dissolve and mix with mangoes.Add pinch of turmeric,red chilli powder and vinegar.The sugar should be of one string consistency and the mangoes should not be overdone.Sugar should be adjusted according to sourness of mangoes.If needed add more sugar.The taste should be sweet sour and tangy.Allow the pickle to cool partially then add raisins.Cool and store in glass jars and refrigerate..

Marinate the mango pieces with turmeric powder and salt.

Keep overnight, remove the water and dry in sunshine or under fan.

Take a bowl, add the mango pieces, spices, jaggery and mix well.

Add the oil and store in a jar.
