Efo riro. Efo Riro is a rich vegetable soup that is native to the Yorubas of Western Nigeria. The vegetables that can be used to cook this soup are Efo Shoko or Efo Tete (Green Amaranth). If these are not readily available where you live, leafy or frozen spinach is a very good substitute.

Efo Riro means mixed Vegetables, it is from the Western part of Nigeria and the Calabar's has a similar soup called "Edikaikong Soup".

Efo Riro is enjoyed by many, you can also use various option of Leaf such as Shokoyokoto Efotete "green amaranth" popularly known as Green e.t.c.

Efo Riro is a very popular Yoruba soup in Nigeria, it is one of my favorite Nigerian soups because of its health benefits.

You can have Efo riro using 12 ingredients and 8 steps. Here is how you cook it.

Ingredients of Efo riro

  1. You need of Spinach.

  2. It’s of Pepper.

  3. Prepare of Roasted panla fish.

  4. It’s of Ponmo.

  5. You need of Onion.

  6. You need of Palm oil.

  7. You need of Vegetable oil.

  8. You need of Salt.

  9. It’s of Maggie.

  10. You need of Locust beans.

  11. It’s of Curry.

  12. It’s of Crayfish.

The name 'efo' means vegetables, hence it is a Yoruba rich vegetable soup.

Believe me when I tell you that this happens to be one of the most delicious Yoruba soups that I have made.

Efo Riro is a Yoruba word and it loosely means 'stirred spinach'.

In Nigeria, the vegetables used for Efo Riro are 'Efo Shoko' (Lagos spinach) or 'Efo Tete' (African spinach).

Efo riro step by step

  1. Get your oils, blended pepper mix.

  2. Wash your roasted fish and ponmo.

  3. Cut and rinse your vegetable.

  4. Boil the vegetable for 5 minutes and cut into mini sizes.

  5. Bleach your Palm oil add some vegetable oil,add your locust beans and onion and fry till translucent.

  6. Add your pepper and stir fry,add salt, Maggie and curry with grounded crayfish,add your ponmo and fish cook for a while.

  7. Pour in your spinach and stir cook,.

  8. Ready to serve with any swallow or eat as an appetizer..

These are the local spinach varieties that are very popular and easily available.
