Today I share a meal that in many ways is a delicacy to us guys in East Africa.

Matoke, cooked green bananas and bean stew.

Matoke (or Matooke) refer to the plantain or plantain banana in Uganda, where plantains are a staple crop.

Ingredients of Matoke and spinach

  1. Prepare of Spinach.

  2. It’s of Onions.

  3. It’s of Carrots.

  4. Prepare of Salt.

  5. It’s of Cooking oil.

  6. It’s of Raw bananas.

  7. It’s of Potatoes.

  8. It’s of Water.

In Uganda, plantain bananas are often wrapped in plantain leaves and steamed until tender.

Matoke is a variety of banana indigenous to southwest Uganda.

It comes from the family of bananas known as the East African Highland bananas.

Matoke and spinach step by step

  1. Put cooking oil and onions in a sufuria.

  2. After a while add carrots then potatoes and bananas.

  3. Add spinach and salt.

  4. Add water then after 20 minutes it will be ready.

  5. Serve with an avocado and enjoy.

Matoke is used mainly for cooking when they are green and unripe.
