Owo and Starch. Owo and Starch As a Sapele born, I was a bit surprised at the look of surprise on the faces of my northern friends when I told them I eat starch. Owo soup (Traditional Delta Urhobo Recipe). Today on BattaBox we are heading to Warri to learn about a Delta State speciality, Starch and Owo soup AKA Yellow and Yellow.

Also, when done, all of the oil should be gone.
I noticed yours has a bit of oil showing still.
You can cook Owo and Starch using 9 ingredients and 4 steps. Here is how you cook that.
Ingredients of Owo and Starch

Prepare of Meat (I used intestine: shaki, roundabout etc.

Prepare of Dry fish.

Prepare of Crayfish.

It’s of Pepper.

You need of Palm oil.

It’s of Salt.

You need of Seasoning.

Prepare of Potash.
-
It’s of Local Starch (not the processed one for clothes).
You can use less oil or add more keun/potash to avoid that.
Urhobo Owo will not have any oil floating/show at all.
Only for her to contact me almost a year later to make Owo for a feature on her blog.

Owo and Starch step by step

Put your meat on fire and allow it to get cooked. When the meat is done, add the quantity of water you need depending on how much you want the soup to be..

Wash fish and add. Add in seasoning, salt, crayfish, pepper and palm oil. Allow it to boil very well for about 5mins depending on the pressure of your cooking flame. Add very little potash to help it mix properly. Mix little quantity of starch in water and pour into it as thickener. Cover it to boil for 2mins and our owo soup is ready..

NOTE; I usually add periwinkles to my owo when adding fish but today, I do not have periwinkle. Its optional but nice. You can also use garri as thickener in place of starch but I prefer user starch, it gives better results for me..

STARCH; mix your starch with cold water inside a clean pot. Dont let it to be too light or too thick if not it would make the starch watery or too hard, mix moderately. Place it on fire, add few drops of oil (it doesn't need much oil). Keep stirring on fire with a wooden spoon and it would gradually turn into a thick paste that is cool enough to serve as swallow. Pour into a plate and serve with the owo soup. Bon Appétit!.
I love to cook and this is the perfect excuse to make Owo (which isn't the healthiest of options).
How to make Nigerian Egusi soup
Now you can serve this delicious Owo soup with boiled or roasted plantains, yams , Starch(usi), Eguoo(plantain usi) or any swallow of choice.
NOTE: - Owo soup is usually cooked to be eaten on the same day. - Urhobos and Isokos dont add tomatoes, but add starch, garri, or mashed yam - Owo soup is also known as oghwo Ofigbo or ogwofibo.
