Jack fruit tomato curry. Canned jackfruit is the star of this lusciously creamy yet easy Jackfruit Curry. Quick, delicious, satisfying, and nutritious, this vegan jackfruit curry had us licking our plates! For the past couple of weeks, I've been wrestling with some inner turmoil.
This curry is a low-fat version of my mother's original recipe.
The dish goes very well with steamed basmati rice or roti.
To the ingredients in the frying pan, add the ground coriander, turmeric, tomato purée and the jackfruit.

Prepare of Cut, clean, wash and slice Jack fruit into small pieces.

It’s 2-3 of potatoes diced(optional).

Prepare 3-4 of tomatoes.

It’s 1 tsp of cumin seeds (jeera).

Prepare 1 tsp of chilli coarse (sukha lal mirch kuta huwa).

You need 1/2 tsp of fenugreek seeds (methi).

Prepare 1/2 tsp of mustard seeds (sarson).

It’s 1-2 of green chillies.

It’s 2 of oinions (1 chopped finely).

Prepare to taste of Ginger and garlic according.

You need leaves of Some curry.

Prepare leaves of Some chopped coriander.

You need leaves of Some chopped onion.
Uncover and shred the jackfruit a bit, then allow the sauce to thicken.
Add the coconut cream and a little water if necessary.
Add the onion, garlic, chilli, curry powder, cumin, coriander, chilli powder, turmeric, cinnamon, tomato, curry leaves and pandan leaf, if using.
Stir in the chilli paste, tomato purée, turmeric and curry powder.

Put the Jack fruit in a pressure cooker and diced potatoes on top of it add salt and 1 spatula of water..let it to have 2-3 whistle then open it.

In a grinder add (ginger, garlic, onion chopped, 3-4 curry leaves, 1/2 tsp cumin seeds, green chillies, all tomatoes chopped) grind all.

In a saucepan add some oil..after heating add fenugreek seeds, rest cumin seeds, mustard seeds, chopped onions, curry leaves when onions becomes brown add chilli coarse and all grind ingredients..add some salt cover let cook for 2 minutes then add Jack fruit mix well.. cover it let it cook for 2 mins and garnish with chopped onions and coriander leaves.. its ready to serve👍.
While that cooks on a medium heat, drain the jackfruit and cut it into small, bite-size pieces.
Add them to the pan, then stir in the water and leave to simmer gently until totally dry.
