Also known as 'Indian squash', 'round melon' or 'apple gourd', Tinda is cooked into a delicious Indian curry, full of spicy and aromatic flavours. Tindsi in Rajasthan, or dhemese in Marathi, this vegetable has different names and variations in different regions and is a great.

Tinda Masala Recipe or Tinday also known as apple gourd is a vegetable that is cooked in almost every Indian household.

Because of its appearance not many people relish this one.

I have to admit that growing up, I too was in the same boat - a big no no for this vegetable.

You can have Masala tinda using 15 ingredients and 8 steps. Here is how you achieve that.

Ingredients of Masala tinda

  1. Prepare 500 gms of tinda.

  2. You need 2 of onions.

  3. You need 2 of tomatoes.

  4. You need 2 of Green Chillies.

  5. You need 5-6 of garlic cloves.

  6. You need 1 inch of ginger.

  7. You need As per taste of Salt and pepper as taste.

  8. You need 1 tsp of coriander powder.

  9. It’s 1/2 tsp of garam masala.

  10. You need 1/2 tsp of dry mango powder.

  11. It’s 1 tsp of turmeric powder.

  12. Prepare 1/2 tsp of jeera.

  13. You need 1/2 tsp of ajwain.

  14. Prepare 1 tsp of sabji masala.

  15. You need Half of glass water.

But over the time I have developed a liking towards tinde.

Tinda is made using round gourds or tinda tossed with dry spices.

Tindas are available for only a short period of time in the year during the monsoons months.

They resemble green tomatoes and are firm.

Masala tinda step by step

  1. Firstly peel the tinda and wash it. Now cut into 4 parts but not till bottom..

  2. Now take a bowl add salt, pepper, haldi, amchoor powder, ajwain, sabji masala and dhaniya powder and add 2 tsp oil..

  3. Now take the slitted tinda and fill the masala in between the cuts and do same with rest of the tindas..

  4. Now take a mixer jar add onions, tomatoes, add garlic, ginger, green chilli and make a paste..

  5. Take a pressure cooker, add oil or ghee, add jeera and dhaniya powder. Then add paste and saute well and cook until oil releases..

  6. Now add the masala tindaband mix well. Let it get coated with masala for 2 mintues..

  7. Add half glass water and garam masala, close the lid and cook for 2 whistles on high flame and low down the flame and cook for 15 min..

  8. Your subji is ready. Serve with roti or paratha or rice and enjoy..

Tindas that have a smooth skin are much better to eat than the ones that have a rough fibrous surface.

This Tinda masala recipe is super quick and healthy.

The addition of tomato paste gives the tinde ki sabzi a tasty tangy twist.

Carve small hole in the center of each tinda.

Saute the tinda that is carved out with a little oil.
