Chana masala, also called chole masala, is believed to have originated in northern India. "Chana" means chickpea and "masala" refers to a blend of spices used in Indian cooking.

It's a popular dish throughout India and Pakistan, with recipes varying by region.

Ingredients of Chana Masala

  1. It’s of Chana/Chole/Chickpeas (Soaked and boiled).

  2. Prepare of Onions, finely chopped.

  3. You need of Garlic cloves, minced.

  4. It’s of Tomatoes, finely diced.

  5. It’s of Ginger Garlic paste.

  6. It’s of Fresh coriander leaves, chopped.

  7. Prepare of Green chilli, chopped.

  8. Prepare of Crushed black peppercorns.

  9. It’s of Turmeric powder.

  10. You need of Red chilli powder.

  11. It’s of Kitchen king.

  12. Prepare of Crushed Kasoori methi.

In Delhi though, we usually make Chole, which is very similar to Chana Masala but uses a special blend of spices.

Both are made with white chickpeas but chana masala is made using basic everyday Indian spices.

Chana Masala step by step

  1. Heat oil in wok or cooking pot. Add cumin seeds, hing. Then add chopped onion, bay leaves and garlic, sauté them till they turn translucent..

  2. Then add chopped tomatoes, grated ginger and some salt. Stir well. Let it cook for atleast 2 mins..

  3. Add some water and start adding all the masalas - turmeric, coriander, garam, anaardana, red chilli, kitchen king, Chana masala. Mix well..

  4. Add boiled Chana and salt (if required). Then add 2-3 cups of water or as per your requirement and mix well. Let it cook for 4-5 mins on medium-low flame..

  5. Cover the pot with a lid on medium low heat for 8-10 minutes. After 10-12 minutes, add crushed Kasoori methi and mix well. Garnish with chopped coriander leaves and onions..

  6. To prepare mint raita - you can add crushed mint leaves to the curd. But I have used mint powder, black pepper and salt..

  7. Serve hot with Chapati, salad and mint raita..
